Low Carb Cauliflower Parmesan

This is one of my favorite vegetarian dishes, and this Rao’s Aribiatta sauce is my new favorite. Low carbs, great flavor with a bit of spice! So good

For the cauliflower:
-cut the cauliflower into 1-1.5 inch ‘steaks’. (Mine sort of fell apart when I didn’t this so that’s why I had smaller pieces)
🔹microwave the cauliflower on a plate with a paper towel for 2.5 mins, just to get some of the water out before cooking.

-The crumb coat:
🔹scramble an egg in a wide bowl alone. Set aside.
🔹in another bowl mix.
-1/2 cup of almond flour.
-1/2 cup oat fiber. (You can use all almond if you don’t have this.)
-1/2 tsp garlic salt.
-1/2 tsp regular paprika.
-1 tsp of Italian seasoning. (Or 1/2 tsp oregano, 1/2 tsp dried basil)
-add pepper to taste. About 1/2 tsp.

🔹Dip the cauliflower in the egg on both sides, then dip in the crumb coat on both sides covering the whole steak.
-Transfer to a frying pan with about 1/4 inch heated olive oil. Med heat. Cook until golden brown on both sides.
-transfer to baking sheet with parchment paper. .

Bake for 5-7 mins on 350° until tender! Add cheese if desired.
