Buffalo cauliflower bites for lunch

I used about 2 cups chopped cauliflower, then mixed it in a bowl with 1 scrambled egg wash and about 1.5 tbsp of oat fiber and a little garlic salt. .
.
Then put them in the air fryer for 15 mins at 375°, toss in buffalo sauce and serve with a little ranch drizzled over top.

After doing this the oat fiber wasn’t completely necessary, it gave them a bit of crunch, but they would have been good just tossed in egg wash or even plain with some oil spray. .
