Spiderweb Pumpkin Low Carb Pancakes

Low carb pumpkin pancakes with ghost and bat shaped eggs.

A fun, festive breakfast this morning !  The kids are so excited for Halloween, and it’s not quite going to be what we are used to this year…. so any fun little thing like this brings a smile !

I used an almond/coconut flour based pancake mix @birchbenders pancake mix.

1 cup pancake mix.
1/4 cup pumpkin purée.
1 tsp pumpkin spice seasoning.
2 eggs.
1/4 cup water.
2 tbsp butter.

Even though the package says just add water, I like to add some egg in to it !

Use a large baggie and put the pancake mix in to the bag, cut about a 1/4”-1/2” hole in the corner to use as a piping bag.

Heat the pan on medium heat, and use spray of choice. I used a ghee/butter spray.

They cook quick, about 45 seconds per side…. the hardest part is flipping it

, mine broke a little, but it’s easier if you use the BIGGEST spatula you can find in your kitchen:)

For the eggs I scrambled 2 eggs and turned the pan on low heat. I Used butter to cook it, and added a lid to the top.

Cook those for about 2 mins on low, and flip once they look almost done on top. By this time the flip shouldn’t be too hard or messy.

Use a cookie cutter for whatever shape you want!
