Keto Chicken Salad

This is my version of my favorite Trader Joe’s chicken salad, but with less calories, and low carb:) .

I love just making this salad at the beginning of the week and keeping it in the fridge for a quick snack. If you ever walk in the door and are super hungry this is a great go to, rather than another carb filled snack. This is really filling too!

10 oz chopped rotisserie chicken.
3 Tbsp lite mayo
1 Tbsp regular mayo.
2 Tbsp sour cream.
1/4 cup finely chopped celery.
6 chopped green onion.
2 Tbsp chopped red onion.
1 clove minced garlic.
2 tsp red wine vinegar.
1 tsp lime juice.
Salt and pepper to taste.

Depending on how much your chicken soaks up you might need to add a little more vinegar… or even mayo, just know the mayo will increase the calorie count.
