Christmas Dinner Keto Balsamic Garlic French Rack of Lamb

These were amazing! And aside from cleaning off the bones it was super easy.

Lamb: 6 bone rack.
-I got this rack of lamb from @crowdcow delivery. Lamb is never my first choice because if the meat quality isnt there, it tastes too gamey for me.

I’m happy to say this was not the case with these, the flavor was really great!

-I cleaned off all of the bones of the lamb, for a frenched rack of lamb. This was a real pain, but worth the effort to get rid of the unwanted fat.

-Season the lamb generously with salt and a little pepper, and sear on all sides for about 2 min each, in a cast iron skillet with butter.
-Let rest in a wire rack.

For the sauce:
-3/4 cup of @splenda brown sugar blend.
-1/3 cup balsamic vinegar.
-3 cloves finely minced garlic.
– 1 Tbsp butter.
-1 Tbsp olive oil.
-1/4 tsp cayenne.
.

-In a new pan heat butter and olive oil on low heat.
-Add in two of the minced garlic cloves. Cook for one min , careful not to burn!
-Add in brown sugar blend, balsamic, and cayenne. With a pinch of salt and pepper.
-Let this reduce for about 3-4 mins.
**Keep the heat low, you don’t want this to burn. Stir often.
-Add in one more minced garlic clove.

-Add the Lamb to this pan with the sauce, fat side down.
-Baste with the sauce, flipping once after 10 mins.
**keep an eye on the sauce so it doesn’t caramelize too much and burn**
-Cook the lamb for about 20 min with a lid on the pan, until internal temp is at least 145°

Serve with sauce over top and parsley as a garnish.
