Chili Verde Chicken and Cheese Enchilada Family Dinner

A great family dinner that’s pretty easy! I just buy a rotisserie chicken from the store and chop it up to use in the enchiladas so it’s not too much work to ask cook the chicken. It takes about 15 mins to prep and 30 min to bake. I usually get these ready earlier In the day and then just bake them whenever we are ready to eat.

For the filling:
-2.5 to 3 cups chopped rotisserie chicken.
-1/2 large white onion finely chopped.
-3 cloves minced garlic.
-1/2 can @edenfoods beans.
-1 small can diced green chilis.
-6 to 8 oz of cheese. I used jack and cheddar mix.
-3 oz @caciqueinc queso fresco to crumble over top.
-1 large can of green enchilada sauce @laspalmassauces .

-4 sheets of @cutdacarb cut in to 4 pieces.

Sauté all of the ingredients except the cheese in a pan for about 5-7 mins. Add in about 1/2 cup of the green sauce to blend it all in.

-In the cut da carb wrap, fill up with a big scoop of the filling, and cheese. Roll up the enchilada in to a baking dish sprayed with oil.
-Fill up the pan and add in the remaining enchilada sauce over top of the rolled enchiladas.
-Crumble the Cacique evenly over top, and bake at 350° for 25-30 mins.

Serve with guac and sour cream!
