Christmas Tree stacked coconut chocolate chip cookies made out of the @mauiketotreats chocolate chip cookie mix!

This is my second entry in to the contest hosted by @mauiketotreats and @lowcarb_eats_and_sf_treats ! #mauiketotreatscreations .

I used this chocolate chip cookie mix, and prepared it according to the directions for the most part.

I added in:
-1/3 cup chopped re-hydrated coconut. (I soak the coconut in a little warm water for at least 2 hours).
-Coconut extract instead of vanilla like the bag calls for, to bring out the coconut flavor.
-An extra 2 Tbsp cream cheese.(because coconut soaks up a lot of moisture, so I didn’t want to cookies to be dry from adding in the coconut).
-1 tsp stevia.

I scooped these out on to a baking sheet on a mat,  and made 3 different sizes of cookies to stack. And baked them according to instructions.

Once they were done I used a wire rack to cool the cookies, and used different size round cookie cutters to clean up the edges of the cookies, so they stack neater.

The frosting was a cream cheese coconut frosting, and used green food color.
-4 oz cream cheese room temp.
-1/4 cup butter room temp.
-1 powdered erithritol.
-1 tsp coconut extract.
-1/4 tsp vanilla extract.

Mix that all up, and add in color.

.
These cookies were so delicious! They didn’t turn out dry at all, and had really amazing flavor with the coconut and chocolate chips.  They sort of look like mini Christmas tree wedding cakes 🤣
