Low Carb Butternut Squash Thanksgiving Side

Butternut squash with a browned butter and maple pecan glaze. Topped with sage, candied pecans and cows milk feta.

This dish has really amazing flavor, all of these components work so well together, and it’s all brought together by this sugar free @choczero maple pecan syrup!

Butternut squash and browned butter with sage is one of my favorite combos, and adding this bit of sweetness, with the salty cheese really turned out great.

.

.

Ingredients:

-1 butternut squash, peeled and seeded, cut in 1/2.

-10 to 12 sage leaves.

-2oz. Cows milk feta.

-8 candied pecans.

-1/3 stick of butter.

-3 Tbsp @choczero maple pecan syrup. (Save $ on any ChocZero, use code LIZLOWCARB ) .

Directions:

**Candied Pecans**

-8 pecans tossed in ChocZero syrup, bake for 5 mins on 350°.

**Browned butter and sage**

-1/3 stick of butter, in a sauce pan cook on low-med heat. Stir often to prevent burning until the butter appears to be turning brown in color. This takes about 6-8 minutes.

-Add the sage leaves to this butter to crisp them up, and they will be dark green when ready.

(You can cook these in a separate pan of butter if you like, it goes from browned to burnt quick, so keep an eye on it!**) .

**Squash**

-Bake on baking sheet covered with foil for about 25-30 mins at 375°. (Every oven is different so check on the squash, it should still be firm, but very easy to slice. The foil will prevent burning and also creates sort of a steaming effect) -Once cooked transfer the squash to a serving dish and slice in to 1/2” thick slices.

**Putting the dish together**

-First drizzle the browned butter over top the squash.

-Sprinkle chopped candied pecans over top.

-Add the feta(you can also use goat cheese, or any other salty crumbly cheese works too, I liked the feta better !) -Drizzle about 2-3 tablespoons of the @choczero sugar free Maple Pecan syrup over top.

-Place the sage leaves on top of everything, sprinkle lightly with finishing salt and serve!
