Twice Baked Garlic Mashed Cauliflower

Twice baked garlic mashed cauliflower.

This is one of my favorite sides, and super easy! Takes less than 30 mins.

Ingredients:

-1/2 Large head of cauliflower(broken down in to smaller pieces).

-1/3 stick of melted salted butter.

-3 cloves minced garlic.

-3/4 tsp garlic salt.

-1/2 cup heavy cream.

-2 Tbsp shredded Parmesan.

-1 tsp paprika for sprinkling on top.

-Chopped chives for garnish.

Direction:

-Microwave the cauliflower in a microwave safe bowl for about 7-8 minutes.

-Add in all of the ingredients (except paprika, and chives).

-Slowly add the cream as you blend to make sure it doesn’t get too viscous, every cauliflower size varies so you might end up using a little less.

-Use a hand blender or food processor to blend all the ingredients together in to a mash.

-**I like to leave it slightly lumpy in texture, but any texture works!** .

-Put the mash in to a baking dish so that it’s about 1.5” thick. Or separate in to small dishes.

-Sprinkle paprika and a little parmesan on top and bake at 350° for about 10-12 mins.

Add the chives on top and serve!

Tip: If your mixture seems to watery when you are blending add in more Parmesan cheese to thicken it up.
