Chocolate Cupcake Santa Hat Christmas Dessert

Getting in the Holiday spirit over here a little early. I think we need all the holiday cheer we can get right now, and these are a great treat! I used the chocolate pound cake mix for these!🎅

This mix was really good, I prepared it according to the package, added an extra egg, and 1tsp stevia. Broke it up in to 9 sort of small cupcakes using a silicone cupcake tray to bake. I used non stick spray, and after cooking, I let them cool in the tray for about 7 mins and they were really easy to get out of the tray. These definitely had a good hint of cinnamon flavor as well!

Scoop out a little hole in the middle of the cupcake to add a little cream cheese filling for the strawberry to stick on top.

I’m not a super big fan of sweet frosting so I decided to make this sort of a cheesecake frosting.

Frosting:
-6oz room temp cream cheese.
-1.5 Tbsp room temp butter.
-1/2 cup powdered erythritol.
-1 tsp powdered stevia (to help offset the cooling effect of erythritol, thank you @lowcarb_eats_and_sf_treats for this tip!😉).
-1 tsp lemon juice.
-3 Tbsp heavy whipping cream.
-1 tsp vanilla.
-1 tsp sour cream.

Use a mixer to mix up all these ingredients until they are a little fluffy and it’s ready!

I used a star shaped frosting tip to pipe on the cheesecake filling. (you can get the plastic version of this at almost any grocery store in the baking aisle or Amazon).
