Hocus Pocus Book Keto Lowcarb Ham and Cheese Breakfast Quiche

Boooook!!! LowCarb Ham, egg and cheese breakfast quiche inspired by the spell book from Hocus Pocus!

-This is a perfect Keto friendly brunch idea for Halloween time! It turned out more like an open faced breakfast sandwich than a quiche, but this ‘dough’ is amazing!  2.6 net carbs per slice!!👻

-1.5 -2 cups @cutdacarb about 3.5 flatbreads. (I save my scraps in the freezer and use them for crusts like this!)

-3/4 cup Parmesan 

-4 tbsp butter. 

-2 tbsp @choczero maple syrup.

-1/2 – 3/4 cup liquid egg whites.

🔹Bake the flatbread scraps at 325° for about 10 min, until it darkens slightly.

🔹Use a food processor to crush them in to sort of an oatmeal texture.

🔹Add the Parmesan cheese and butter and microwave for about 30 seconds in a microwave safe mixing bowl. 

🔹Add the egg whites and syrup and kneed the ‘dough’ together. It should feel like sort of a doughy texture… no dry spots.

🔹Line a 13×9 cake pan or baking dish with parchment paper. 

🔹Use your hands to spread out the dough evenly, and a little up the sides. 

🔹Bake crust for 7 min at 325°, set aside.

Filling:

-8 eggs.

-1/4 cup cream.

-1/4 cup cooked red pepper.

-1/4 cup cooked orange pepper.

-1/4 cup cooked onion.

-1 tsp salt.

-pepper to taste.

🔹Add a layer of cheese slices to the crust and then egg mixture and bake at 340° for 15 min.

For the topping:

-1/2 cup shredded mozzarella.

-6 slices of @boarshead maple ham, sautéed for about 30 seconds. I felt this ham was sort of the closest color to re-create the look of the book.

🔹Sprinkle mozzarella or your cheese of choice on top, and cut the pieces of ham in to different shapes to ‘stitch’ together. 

🔹Leave a hole opening for the eye, and use a separate piece of white cheese underneath so the eye cut out to make an even surface. 

🔹Use the end of a black olive for the eyeball.

🔹Use Pre-shredded parmesean or cheese of choice to creat the stitches.

🔹Bake at 325 for about 5 mins to melt the cheese and serve!
