Balsamic Chicken with Zucchini Noodles

Balsamic marinated Chicken, with zucchini noodles, Burrata cheese, topped with a fresh balsamic tomato and shallot sauce. .

Well today is the first day of summer and this is a great light dish to kick off the season.

I love the balance between sweet and savory. I also did a balance of heat and coolness.  The zoodles and grilled chicken are warm, and they are topped with a cool bit of Burrata and bright, cool,  tomato sauce. Perfect dish for a summer dinner

For the tomato sauce:
-fresh chopped cherry/grape tomato.
-3 tbsp EV olive oil.
-2 tbsp @traderjoes pesto. (Or any pesto. Or chopped basil.)
-1 large finely chopped shallot.
-1/4 cup red wine vinegar.
-1/3 cup balsamic vinegar.
-3 cloves finely minced garlic.
-salt and pepper to taste. .

No need to cook, just add all ingredients together and enjoy!
