Low Carb Chocolate Chip Cookie Dough Ice Cream

Low carb, home-made chocolate chip cookie dough ice cream!!

🔶Ingredients:
-8 oz whipping cream.
-3 tbsp powdered Erithritol. @sonourishedinc .
-1/4 tsp xantham gum @bobsredmill .
-1/2 cup @choczero milk chocolate chips (discount link in bio!) .
-1 small bag of @highkeysnacks chocolate chip cookies (discount link in bio) .
-1 tsp vanilla extract.

🔷Directions: **in a metal bowl**
-mix cream, sweetener, xanthan gum (to prevent ice crystals) , vanilla , whisk vigorously until the mixture starts to sort of foam.
-Add @choczero chocolate chips.
-place in the freezer for 20 mins, mix again. Continue checking the mixture in 20 min increments and mixing as you go.
-Add in crumbled @highkeysnacks cookies after about 1hr .

-continue to freeze mixture until it can be scooped wit a a spoon.
*This whole process should take around 2 hours.

These ingredients are all so amazing my husband had no idea it wasn’t ‘real’ ice cream!!!
