Green chili creamed corn
So I know corn definitely isn’t keto, but I didn’t add any additional sugar to the cream mix, so it was as low-carb as creamed corn gets! It turned out great and was a nice little Sunday treat!.
Creamed corn: 4 servings:
4 ears of corn-boiled for 4 mins(19 carbs per ear).
1/2 cup of heavy cream.
2 tbsp butter.
2 tsp Splenda, or your choice of sweetner.
1/2 can of green chili’s.
1 tsp of xanthan gum(to thicken it)
1/4 cup Parmesan.
1 tsp salt.
Pepper to taste.
Mix all the ingredients except corn and chili’s together on med heat in a pot until mixture thickens (about 12 mins)then add corn and chili’s, and cook for an additional 3-5mins. See how this consistency is for you and possibly add more Parmesan to thicken it up to your taste!
