Creamy Pesto Spaghetti Squash
Creamy pesto spaghetti squash, with chicken, mushroom and low carb noodles

This was a tasty easy meal, and even though it looks fancy it was so easy!

Day 3/30 cooking at home challenge.

Grill chicken seasoned with Garlic lovers @flavorgodseasoning and olive oil. I love this seasoning because the flavor works with pretty much any flavor you are trying to achieve!

For the Squash:
Cut the stem off of a spaghetti squash, and poke the skin with a fork 5 times. Microwave for about 12 mins (rotating every 3 mins) until skin is tender.

Cut in half and scoop out seeds. Discard seeds. Then scoop out the spaghetti squash noodles in to a bowl.

Mix in pesto sauce (Trader Joe’s), softened cream cheese, steamed mushrooms, a sprinkle of red wine vinegar, salt and minced garlic clove.

I also added some cooked leftover @greatlowcarb spaghetti noodles, mixed it all up, added cheese and chicken. Then microwave for about 1.5 mins when you are ready to eat!

The best part about this is you can really just mix up anything you want with the spaghetti squash and put it back in to the shell to bake or heat up for a tasty healthy meal….also It’s so easy to make this meal #vegetarian ….. just leave off the chicken!
