Low carb stuffed crust Mexican Pizza for lunch today!  Perfect for Taco Tuesday

. What’s better than pizza and tacos together ?!

I really like stuffing  the crust with a little cheese, it makes the crust hold up really well with the sauces and toppings! Just like a real thin crust pizza!

I used 2 sheets of @cutdacarb flat breads with shredded white and yellow cheddar, and sliced Serrano peppers in the middle.

Grill this in a grill pan with oil spray until both sides are a little crispy.
.
.
Add chipotle sour cream sauce (see highlights under dressings and sauces for my chipotle sauce recipe)

Add your toppings! I used Eden foods soy black beans, a little more cheese, roasted corn, green chili chicken (recipe coming soon for chicken!) pickled red onion.

Leave it on the grill pan and bake at 350° for about 10 minutes, until cheese is melted.

.
After it’s done baking slice and add avocado and cilantro, serve with sour cream for dipping !
