Curry Pork Loin
Vindaloo curry pork loin, with a cucumber raita, curried beets, and low carb cheese ‘naan’.

This marinade was so easy so so good, I also used it for chicken as well. Both turned out amazing.

Meat was just under a lb of @butcher_box pork loin. I cut it in half and marinated the meat then seared on all sides and finished in the oven until the temp reaches about 143°. Cooked temp for pork is 145 but if you wait for the thermometer to tell you 145 it will continue to cook, and turn out dry.

Marinade:
-2 tbsp vindaloo curry powder.
-2 cloves minced garlic.
-1/4 cup Greek yogurt.
-2 tbsp olive oil.
-1/2 tbsp Splenda or sweetener.
-1 tbsp lime juice.
-1 tsp yellow curry powder.

Marinade for at least 2 hours, and salt right before you grill it.

I added some @porkkinggood crumbs to my pork loin after I marinated it, and it was good! Not necessary though, they are really good with just the marinade.

For the cheese naan, I used a sheet of @cutdacarb and added cream cheese and cheddar in the middle, and grilled it up on the pan like a quesadilla. .
