This is a recipe based off of my favorite dip from Luna Grill, and in my opinion tastes almost exactly the same!

.
Ingredients: *Baked @cutdacarb flatbread for the chips. .
.
*Dip:
🔸6 oz. red pepper. (Pre roasting)
🔸5 oz. Feta, full fat. (I prefer @presidentcheese cows milk feta in a block)
🔸1/2 tsp red pepper flakes.
🔸2 Tbsp. Ricotta, full fat.
🔸3 cloves garlic.
🔸1 Tbsp Red wine vinegar.
🔸1 Tbsp EV olive oil.
🔸1/2 Tbsp Lemon juice. .
.
.
*Directions:
🔹Spray red bell pepper with light oil spray, and roast on a hot pan until they soften, and the skin starts to blister. 🔹Put Roasted red pepper, garlic, vinegar, olive oil, lemon juice, and red pepper flakes in to a blender, and blend until smooth. (Adjust the red pepper flakes to your spice taste)
🔹Pour mixture in to a bowl and add ricotta. 🔹Crumble up the feta and add it in to the mixture. This should sort of soak up the red pepper mixture. If it’s still watery add more feta until it is thicker. .
