Roasted Chimichurri Cauliflower

Roasted cauliflower with chimichurri sauce🥦.

 This isn’t your typical football party app,

but it’s really tasty and if you have any vegetarian or vegan friends they will definitely appreciate this one! .

Cut up head of cauliflower,  roast (with or without oil)  for about 17 min on 385. (Depending on oven) Take it out once it’s done, I made the mistake this time of leaving it in the toaster oven after it was done cooking while busy cooking other things, and they got a little mushier than I typically like.

Toss in the Chimichurri sauce, and serve. .

Chinichurri sauce:.
🔹handful of cilantro.
🔹handful of Italian parsley. 🔹2 small cloves of garlic.
🔹1/4 cup of olive oil.
🔹1/4 cup red wine vinegar.
🔹1/2 tsp red pepper flakes. 🔹1/2 tbsp cumin.

🔹salt to taste.

Blend it all in a blender or hand blender. .
.

.
This sauce goes great with steak as well! If it isn’t as runny as you would like at the end add some more vinegar or even lime juice.  Also I tend to like cilantro better so I usually end up putting a little more cilantro than parsley
