Low Carb Lasagna

Lasagna made with @cutdacarb as the ‘noodles’. This is a great family dinner and will feed us for a while so I don’t have to cook every single meal.
.
.
It re-heats and freezes well! Always a great option to have ready to go in the fridge!
.
.
.
Sauce ingredients:
Jar of Pasta sauce of choice.
20 oz ground turkey. 93/7
1/2 onion chopped.
1 cup steamed mushrooms.
2 cloves minced garlic.
-added pesto 1.5 tbsp.
-added crushed red pepper flakes. 1/2 tsp.
-added red wine vinegar about 1 tbsp. .
.
Cook sauce until most of the water cooks out, you don’t want to it to be too watery or the flatbreads get a little soggy!
.
.
.
Ricotta mix.
1.5 cups whole milk ricotta.
1 clove minced garlic.
About 1/2 cup frozen spinach.
garlic salt. 1/2 tsp.
1 egg.
.
.
.
Also used shredded mozzarella, and provolone cheeses. .
.
We also had some fresh mozz I needed to use up so I threw that on the top as well!
