Cucumber Raita

Cucumber Raita sauce.

Ingredients:
-3/4 cup 2% Greek yogurt.
-1/4 cup full fat sour cream.
-1 cup cilantro, with stems is fine.
-1/2 Serrano pepper (or to desired spice level)
-2 small cloves finely minced garlic.
-1 tbsp lime juice, or red wine vinegar.
-1/2 tsp cumin.
-1/2 an English cucumber, seeded and cut in to but size pieces.
-1 tsp kosher salt.
-1/4 cup chopped red onion.

1) Peel and seed the cucumber and cut in to bite size cubes. Set them on a thin towel and sprinkle the salt over top. Set them aside.

2)In a blender, or using a hand mixer blend together the yogurt, sour cream, lime juice, Serrano pepper, garlic, cilantro and cumin. Transfer to a bowl if in a blender.

3)Using the towel, tightly wring out any excess water out of the cucumber.

4)Add the cucumber and the red onion to the blended yogurt mix, and serve!
