Vindaloo Curry Chicken Kebabs

Vindaloo curry chicken kebabs. This is hands down the best chicken I have ever made!

Chicken marinade:
-1.5 lbs chicken breast, butterflied, pounded thin, and cut in to 1inch x 2inch rectangles.
-1 cup 2% or 5% Greek yogurt.
-5 cloves finely minced garlic (or frozen garlic cubes.
-2 tbsp vindaloo curry powder.
-1.5 tbsp yellow curry powder.
-1 tsp cumin.
-1/3 cup olive oil.
-1 tbsp powdered sweetener (I used @splenda)
-Juice from 1 large lime. About 1-1.5 tbsp.

*1 lime, a handful of cilantro, and salt will be needed before serving.

This mixture should be sort of an orangey color. See photos.

-Put all the cut up chicken and marinade in to a large baggie or container, and marinate for at least 24 hours!
-I recommend 2 days.

Use a skewer and thread the chicken on to it. I took the pieces and basically folded them in 1/2 if they were longer, (so basically the skewer passes through the longer pieces more than once).
-Make sure all the pieces are very close together on the skewer.

**Sprinkle the chicken with salt right before cooking.

Heat and oil  a grill pan, or grill, and cook on each side for about 2 minutes each. I cooked this on 4 sides, so this was a total of about 8 mins.

**sprinkle cilantro, and squeeze lime juice over top each skewer before serving**

I served with cucumber raita, and cheese naan, with a veggie rice pilaf. (Recipes to follow)
