Low Carb Chicken Parmesan


Low carb Chicken Parmesan with zucchini noodles and garlic bread, with a caesar side salad and low carb croutons!

So crazy this is all low carb! The chicken is ‘breaded’ with @porkkinggood crumbs seasoned with @flavorgod garlic lovers, paprika, and a little salt.

I just pound the chicken thin, dip in scrambled up egg, and coat in the crumb mixture. Cook with oil or butter on each side until golden brown on each side, about 3-4 mins per side.

Then top the chicken with @raoshomemade arrabbiata sauce, fresh mozzarella and bake at 350° on a wire rack for another 2 mins.

For the garlic bread:
I took a @thesolacompany low carb bun, pulled a little of the center of the bread out (to make croutons) topped with a butter, mayo, garlic mixture. Garlic salt and mozzarella. Then baked for 3-4 mins.

Croutons: pull some of the bun from the center, dip it in the same garlic butter mixture used for bread, and toast them until crispy!
I used Girards caesar dressing.
